Chef Mira Angeles of Spell Kitchen at The Maya Kitchen Top Eats Series

It was an honor to meet Chef Mira Angeles of Spell Kitchen at The Maya Kitchen Top Eats Series last week where she had a cooking demo of Taco Salad, Garlic Cheese Butter dip, healthy Vegetable Lasagna, indulgent Belly Good Lechon Kawali, and sweet Apple Turon.

Over a decade of being a chef and a lifetime of loving food has led Mira Angeles to where she is now, owning a “magical” restaurant and sharing the joys of cooking to others. It took years of training and several attempts at entering the industry before finally becoming a well-loved chef, but now she’s sharing her talents and inspiring others to take up the skill with a Maya Kitchen Top Eats session in her very own Spell Kitchen.

It’s not a stretch to say that Mira has been cooking her whole life, being that her mother was taking classes at Le Cordon Bleu while pregnant with her. Her family has always loved eating good food and watching cooking shows, making her a foodie since she was young.

Though she didn’t get to immediately pursue her chef dreams, life worked its magic and steered her that direction anyway. Working at ABS-CBN, she was partnered with Food magazine’s Micky Fenix who introduced her to chef Myrna Segismundo. The two reignited her passion for food and became her mentors. She eventually entered certificate courses in ISCAHM for fundamentals of Culinary and Pastry, then other short courses in Maya Kitchen. She soon became a full-time chef and opened steak restaurant Cow King with her brother.

While steaks were something she was perfecting, she also indulged her creativity by creating different dips which, through word of mouth, amassed a huge following. Not long after that, she fulfilled her dreams of writing with regular recipe contributions to Yummy magazine; of teaching as she holds special classes at Maya Kitchen and at culinary events space Back of the House; and of opening her own restaurant with the magic-inspired Spell Kitchen, after the closing of Cow King. In this new restaurant-cafe, she puts her twist on Filipino comfort food, along with steaks and her famous dips, spreads, and salad dressings.

But more than just running down recipes, the chef imparts the lessons she’s learned from her cooking career. One of them being: “Dishes should be done well. Never settle with ‘pwede na yan.’ Always do things with quality no matter how simple your dish is.”

This respect for food and for her customers is one of the things that makes Mira such a well-loved chef. And for those just starting out, she has this to say: “One should make time to practice and never give up. I’ve had failed Chiffon cakes, burnt brownies, and a chocolate mousse that didn’t turn out well. One must persevere in order to have success.”

For more of Chef Mira Angeles’ quality cooking, Spell Kitchen located at Tomas Morato cooks up magic meals daily.

Asia Pop Comic Con 2017

My family scheduled a trip to Hong Kong from August 25 to 28 to take advantage of the long weekend but when Abi announced that Asia Pop Comic Con 2017 will be from August 25 to 27, I had no choice but to cancel the trip.

John and I were packed and ready to be at  APCC very early last Friday, unfortunately we had to rush my mom-in-law to the hospital.

It was only on the last day that I made it to Asia Pop. John had to take care of Mama so it was Juancho who took his dad's place to cover for Jampacked Lifestyle.

Avonlea Paula Paraiso

The first time John and I watched the beautiful, 5’6.5″ model and harpist Avonlea Paula Paraiso play the harp was last month at Rajo Laurel and American Standard Event in Uptown Mall.

John asked me, "where did she leave her wings?". I looked puzzled, so John continued, "she looks like an angel that went down from heaven and played the harp, so where did she leave her wings?".

Kampai Sushi Bar

I've been a fan of Japanese food for as long as I can remember. I love how the food is presented, colorful and beautifully plated.  In all our travels, we make sure to find a Japanese restaurant to feature. At our recent trip to Antipolo, we didn't have a hard time finding one because the #Mendiolables were invited by no less than the lovely owner of Kampai Sushi Bar.

Kampai Sushi Bar used to be located near Ynares center but is now strategically located at the al fresco dining area of ultra cool and cozy Robinsons Place Antipolo.

At Kampai you will find one of the best Ramen with big servings, Salads, Gyoza, Katsudon, Sushi, Rolls, Maki, Nigiri, Sashimi, Donburi, Bento Meals and desserts. But what takes this sushi place a cut above the rest is the jamming session where diners can join the fun by singing solo or duet with the resident singers.

Kampai Sushi Bar is ideal for groups, families, friends, as well as couples who deserve to chill and sing while having the best sushi in town.

We, the #Mendiolables, had a great time eating, chillaxing, singing and chatting at  Kampai Sushi Bar.

Casa Nieves

A restaurant will be two thumbs up for me when my kids enjoy the food because it's quite hard to please Julia, Rafael and Juan.  Our visit to Casa Nieves was worth all the our effort to brave the traffic and rain because they serve the best Paella in town! Julia and Juan does not eat Paella at all but they loved Casa Nieves Paella Valenciana. Plus, I actually didn't want to eat that night but when I had a smal portion of Paella, oh my goodness I coudn't stop myself from eating.

We've also tried their Beef Salpicao, Kaldereta and Pakbet with Bagnet, and I must admit, it ruined my no rice diet because the food tastes so delicious!

But don't you just take my word for it, visit Casa Nieves  in Antipolo and experience their great tasting Italian, Filipino and other dishes.

Pajama to Infinity Scarf

I love pajama, I love scarf, I love recycling, I love upcycling. I put them all together  and I got an infinity scarf.

It's actually very easy an inifinity scarf using an old pajama. Thanks to my friend Gilda Ibita for helping me do it. Here's how.

1. Choose an oversized pajama
2. Cut the garter, cut the bottom, cut the inner thighs straight.
3. After cutting, you have the option to sew the cut pajama or use textile glue to create the infinity scarf.

Manulife versus Sunlife

When I was pregnant with the twins in 2002, I decided to get a life insurance. After a month, John got one also. The next year when Julia and Rafael were born, we got for them as well. And in 2006,  when Juan was born, we insured him too.  All these five insurances are under Sunlife.

In 2012 when my friend Rose Gacad needed sales, I got a VUL for the three kids (an insurance that earns dividends) with Manulife. Then followed by my Eve (an insurance that covers dreaded diseases for women) then we got VUL John three years ago.

To cut the nonsense, napuna ko lang na mas maganda ang extra service ng Manulife compared to Sunlife. To think I've been to Sunlife 10 years earlier than Manulife. For Sunlife kasi I pay at either Paseo Branch or Ortigas Branch. Wala akong nakikitang free coffee doon. One time I asked the Manager in Paseo Branch, "Do you have complimentary coffee for your clients here?". To which she replied with a question, "gusto nyo po ba ng coffee?". I didn't bother asking again, nakakahiya yung para kang nanlilimos ng kape, hahahaha!

GPTA 2017-2018 Bougainvilla Planting at MandSci

This is my second and last year to be an officer for General Parents and Teachers Association for City of Mandaluyong Science High School so I'm giving my full support for our hardworking (always nag aabono at nagpapakain sa amin) President,  Sir Levy Cabeliza.

For the first project of GPTA 2017-2018, we helped the school in planting more Bougainvilla at the Senior High Building in coordination with our beloved principal, Dr. Teresita Evangelista.

Special mention goes to the #BatangMandScie, namely Sophia, Denise, Josue and Luther for bringing the plants from first floor to fourth floor. Thanks Mr. Guillarte for helping Sir Levy finish the planting of this beautiful yet thory plants. Last but certainly not the least, the school staff (whom I forgot to get the name) who watered the plants.

Irvins Salted Egg

I first tasted Irvin Salted Egg when my brother Jubert brought one as pasalubong from Singapore. Since then I'd ask friends to buy for me when they travel to this most expensive city in the world.

I'm happy to announce that Irvin Salted Egg is now available in the Philippines with its stall at the ground level of SM Megamall.  John, Juan and I witnessed its opening. We happily waited for the long line to buy this popular chips.

How To Grow Beatiful Cactus

When I was a kid, I heard from old folks that it is not good to have cactus in the house because it'll make family relationships thorny (unstable). Aside from that, I actually didn't like this plant before because I pricked myself several times with a cactus while playing in a neighbor's garden.

At 44, I've outgrown this pamahiin (myth). I'm actually turning to be a big fan of cactus for four reasons, namely, it is affordable (sells around 3 to for P100 or P50 each), it is easy to maintain (you only need to water it when the soil  begins to dry, and it can stand extreme heat, and it's fun seeing them sprout as it produces different shapes and sizes.

Cactus is a unique and stark beauty! I'm growing so fond of this surprising plant that I now have several pots decorated in the whole house.

Growing desert cactus is actually easy because it is among the toughest of all houseplants. These pretty simple rules applies in the Philippines:

1. Light: Strong light is essential. Temperature: During the active growth period, cacti prefer hot, dry temperatures, ranging from 70ºF to more than 80ºF.

2. Only water if  the soil  begins to dry.

3. Cactus are slow-growing plants and will rarely need repotting. Many species of cacti will bloom better when they are slightly under potted.

4. I didn't event use fertilizer to grow my cactus but if you feel like using fertilizer, go ahead.

5. The most common mistake is over watering cactus so make sure to keep it away from palyful kids. Or do remind them, that mommy is the only one who will water the cactus.

Kita Kita

When Kita Kita's trailer were shown in movie houses months before, my husband said, "it looks like a good movie."

At such a short preview John found this movie a must see one, to think he is not into romantic/love story films.

With busy schedule, I've completely forgotten about Kita Kita until the time when I was paying five tickets for Valerian in Uptown Cinema, my daughter blurted, "Mom, I'd like to watch that. They said it's a nice movie." Looking at the clock, we have 2 hours waiting time for Valerian so Julia and I watched it while the boys shopped.

This is the kind of movie na uulitin mo at ikukuwento mo ng todo sa kaibigan dahil tagos sa puso. Alessandra has always been a great actress, no question about that. Empoy was a revelation!

Kita Kita (I See You) is directed by Sigrid Andrea P. Bernardo and not Direk Joyce
Apologies po Direk Sigrid.

Here are hugot lines at mga nakakatawang hirit na tumatak sa aking isipan from Kita Kita:

“Bakit pandak pa rin kayo? ‘Di naman kayo bonsai?” – Lea (Alessandra de Rossi) to her potted plants.

“They say that if you make a thousand paper cranes, your wish will come true.” – Lea

“How will you know I’m honest if you cannot see my eyes?” – Nobu Lea, as per Sari’s correction in the comment section.

“Tour guide ako ng sarili kong buhay.” – Lea

“Ito na. Ito na talaga. Wala ng blood clot sa puso ko. Dadaloy na ang dugo sa puso ko.” – Lea

“Nagluto pala ako ng turon. Matamis. Baka kailangan mo ng asukal. Ang asim kasi ng mukha mo.” – Tonyo (Empoy Marquez)

– Tonyo

“It’s now. It’s never. But for now, I am late.” – Tonyo

“Malaki ang puso ko, at ‘di magtatagal sasabog ito. Ang hiling ko lang, bago man ito sumabog, makilala man lang kita.” – Tonyo

“Noong nakakakita ka, ‘di mo ako nakita. Nang mabulag ka, doon mo lang ako nakita.” – Tonyo

“Salamat, puso. Nagmamahal, saging.” – Tonyo

NNES Batch '86

It was a day of fun, giving back and get-together as NNES Batch '86, where I belong, went back at our beleoved alma mater - Nagkaisang Nayon Elementary School, to inspire Grade 6 students as well as share snacks from generous classmates and batchmates.

August Birthday Dinner at Hukad

August is one of the happiest months in our family because four of our members are celebrating their birthdays, namely, Jubert and Izhi on the fourth, Papa (+) on the 6th, and Ate Che on the 8th.

We normally celebrate it on the 6th for Papa's birthday but since most of us have prior commitments on the 6th, we celebrated August Birthday Dinner at Hukad this year on Jub's and Izhi's birthday.

I'm happy that Nonoy (Jub) chose Hukad to be the venue. I've been to Hukad quite a number of times. I was actually there when they launch it to the media.

Salamat Nonoy for the treat!

Finally Found Someone

I've watched all John Lloyd Cruz and Sarah Geronimo movies so when it was announced they'll be having a movie together again, I already put it in my calendar (yes, even without the date yet, ha!ha!ha!)

Finally Found Someone still has that kilig factor from the two stars but before I go on, I just want you to know this is not a movie review. I'm just happy to have watched this movie with Jing, my friend since elementary, and Jam my inaanak.

What made this movie more fun? Jam treated Jing and I, may work na kasi sya, yahoo! Giving back time na ang favorite inaanak ko!
