Afritada is one of the common viands Filipinos cook for lunch or dinner. It has variations, it can be cooked with pork, beef, fish or even just vegetables. I've seen my Mama served this when I was a kid but I never learned from her. Maybe because I was mostly not in the kitchen while she was cooking.
When cooking chicken, I always make sure it is skinless for a healthier meal for my family. I like adding boiled eggs because my kids and I like eggs a lot! I even bring the eggs at the gym for my snack.
